Knead the sugarpaste on a surface lightly dusted with icing sugar until it is pliable
Sprinkle a little icing sugar over the rolling pin to prevent sticking
Roll out the sugarpaste to the required thickness and until it is large enough to cover the top and sides of the cake
Make sure the sugarpaste is smooth
Carefully lift and drape it over the cake and use your hands to smooth the sugarpaste against the sides of the cake
Trim around the bottom to remove any excess
Buff the cake surface with cake smoothers for a polished and professional finish
